How you store meat matters as much as how fresh it was when you bought it.

Same day If you will cook within a few hours, keep the meat covered in the coldest part of the fridge.

Two to three days Portion the meat, pat it dry, and store in airtight boxes at the back of the fridge.

Longer than three days Freeze in meal-sized portions. Flatten the bags so they freeze quickly and thaw evenly.

Thawing Always thaw in the fridge overnight, never on the counter. Never refreeze thawed meat.

Labelling Write the date on every bag. It removes all guesswork later.
